Gregory was born Tuesday, December 1, 1964 in New Orleans, to George Joseph Guillot, Sr.and Saundra Lee (Snavely) Guillot. He attended school in Louisiana, Oklahoma, and then Dallas where he graduated from The Arts Magnet High School at Booker T. Washington in 1982. Although Greg was a musician playing mainly tenor saxophone and drums, he chose Theater as his art of study. He was known by his classmates as “Animal”, and many people still call him that today. After graduation he moved to New York to pursue a career in acting, but began working in a NYC kitchen where he worked his way up to chef. This is when he developed his love for cooking. He moved back to Dallas and worked in the music industry, but decided to join the United States Air Force. Greg served our country from 1984 - 1988 and received an Honorable discharge. From there he worked as a cable splicer, his trade in the Military. Greg began taking I.T. course and became a Unix Systems Administrator. Greg was employed at Trend Micro Systems, and this was a job that he really loved. Greg played drums for most of his life, and played in many great bands over the years, several with very close friends. He would pull out his Saxophone on occasions.

Greg married the love of his life, Karen Bailey, October 15, 2014 in Addison, TX. He and Karen had a special love for each other and have many things that they enjoyed doing. They both loved to tell jokes, cooking together, checking out new restaurants, wineries and breweries, working in the yard together, watching movies, playing and listening to music, and bird watching. Greg was known as a drummer, but he was especially known for being a cook. He was known for his BBQs and Crawfish Boils. Greg was a very proud Cajun! For his more adventurous friends, he loved to cook more exotic foods. Greg was very gregarious, was the life of the party, and had never met a stranger. He was also a very generous man. Greg was larger than life and will be deeply missed by many people.

Greg was preceded in death by his mother, Saundra.

He leaves behind his wife Karen Bailey Guillot of Bray, O.K., his son, Gregory Ranald Edward Guillot II and his girlfriend Miki Arthur of Ft.Collins, CO, father, George Guillot and wife Nancy of Trinidad, TX, his big brother Gig Guillot and his wife Ana Schmitz of Denton, TX and his little sister, Nancy Rowland and husband Stewart of Kilgore ,TX, along with several nieces and nephews, some very dear friends that were family to Greg, and his pets which he loved and adored.
